化学性质 能将构成植物细胞膜的多糖类(纤维素和果胶物质除外)加水分解的各种酶的总称。主要作用为使槐豆胶和古柯豆胶之类多糖中的β-1，4-葡聚糖键水解而成p糊精。由三种黑曲菌所制得的半纤维素酶，最适pH值为3.0、5.0和5.5；在30°C下维持24h活性仍为100%的pH值范围分别为3.5～10，2.5～6，4～7；在pH 5.6下维持15min活性仍为100%的温度分别为50~C：、60°C、70°C。

近白色至浅灰色无定型粉末或浅灰至深棕色液体。作为商品可含有食品级稀释剂、载体、稳定剂和防腐剂。溶于水，几不溶于乙醇、氯仿和乙醚。

用途 酶制剂。主要用于谷类和蔬菜加工，与果胶酶合用可使柑橘类果汁澄清；用以处理咖啡豆，可使咖啡的抽提率增加；处理大豆，可提高其可消化性。
