化学性质 白色至黄白色结晶性粉末或颗粒。几乎无臭。略有咸味。干燥状态下于空气中相当稳定。但在溶液中，在有空气、微量金属、热和光存在下会变质。熔点200°C以上(分解)。易溶于水(17g/100m1)。几不溶于乙醇。2%水溶液的pH值为5.5～8.0。

用途 抗氧化剂；防腐剂。

用途 异抗坏血酸钠是我国允许使用和国外广泛使用的水溶性抗氧化剂。其抗氧化性能大大超过维生素C，且价格便宜。我国规定可用于各类罐头、果酱和冷冻鱼，最大使用量1.0g/kg；也可用于肉制品，最大使用量0.5g/kg(以抗坏血酸计)；也可用于葡萄酒和果汁饮料类，最大使用量0.15g/kg；也可用于啤酒，最大使用量0.04g/kg。

用途：D-异抗坏血酸为食品行业中重要的抗氧保鲜剂，可保持食品的色泽，自然风味，延长保质期，且无任何毒副作用。在食品行业中，主要用于肉制品，饮料，水果，蔬菜，罐头，果酱，啤酒，汽水，果茶，果汁，葡萄酒等。
